Ingredients

  • Zucchini - 2 medium (about 300g)

  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Plain yogurt - 200g
  • Lemon juice - 1 tablespoon
  • Fresh mint - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the zucchini and slice them into 1/2 cm thick rounds.
  3. In a mixing bowl, combine the zucchini slices with olive oil, minced garlic, ground cumin, salt, black pepper, and paprika. Toss until the zucchini is well coated.
  4. Arrange the seasoned zucchini on a baking sheet in a single layer.
  5. Bake in the preheated oven for about 20 minutes, or until the zucchini is tender and slightly golden.
  6. While the zucchini is baking, prepare the yogurt sauce by mixing the plain yogurt with lemon juice and chopped mint in a small bowl.
  7. Once the zucchini is done, remove it from the oven and let it cool slightly.
