- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Plain yogurt - 200g
- Lemon juice - 1 tablespoon
- Fresh mint - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Wash the zucchini and slice them into 1/2 cm thick rounds.
- In a mixing bowl, combine the zucchini slices with olive oil, minced garlic, ground cumin, salt, black pepper, and paprika. Toss until the zucchini is well coated.
- Arrange the seasoned zucchini on a baking sheet in a single layer.
- Bake in the preheated oven for about 20 minutes, or until the zucchini is tender and slightly golden.
- While the zucchini is baking, prepare the yogurt sauce by mixing the plain yogurt with lemon juice and chopped mint in a small bowl.
- Once the zucchini is done, remove it from the oven and let it cool slightly.
