Ingredients

  • Zucchini - 300 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Chopped fresh mint - 2 tablespoons
  • Egg - 1 large
  • Whole wheat flour - 3 tablespoons
  • Grated Parmesan cheese - 30 grams
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.
  3. In a mixing bowl, combine the grated zucchini, salt, black pepper, garlic powder, cumin, parsley, mint, egg, flour, and Parmesan cheese. Mix well until combined.
  4. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them slightly to form fritters.
