- Zucchini - 300 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Chopped fresh mint - 2 tablespoons
- Egg - 1 large
- Whole wheat flour - 3 tablespoons
- Grated Parmesan cheese - 30 grams
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, salt, black pepper, garlic powder, cumin, parsley, mint, egg, flour, and Parmesan cheese. Mix well until combined.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, flattening them slightly to form fritters.
