- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 30 ml
- Zaatar spice blend - 30 grams
- Olive oil (for topping) - 30 ml
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until foamy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Preheat the oven to 220°C (425°F).
- Once the dough has risen, punch it down and divide it into two equal portions.
- Roll out each portion into a flat round shape about 1 cm thick.
- In a small bowl, mix the zaatar spice blend with 30 ml of olive oil to create a paste.
- Spread the zaatar mixture evenly over each rolled-out dough circle.
- Place the manakish on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before slicing and serving.
