Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 30 ml
  • Zaatar spice blend - 30 grams
  • Olive oil (for topping) - 30 ml

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until foamy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat the oven to 220°C (425°F).
  6. Once the dough has risen, punch it down and divide it into two equal portions.
  7. Roll out each portion into a flat round shape about 1 cm thick.
  8. In a small bowl, mix the zaatar spice blend with 30 ml of olive oil to create a paste.
  9. Spread the zaatar mixture evenly over each rolled-out dough circle.
  10. Place the manakish on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown and crispy.
  11. Remove from the oven and let cool slightly before slicing and serving.
