- Eggplant - 150 grams, diced

- Carrot - 100 grams, sliced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Canned chickpeas - 100 grams, drained and rinsed
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the zucchini, eggplant, bell pepper, carrot, onion, garlic, and chickpeas.
- In a separate small bowl, mix together the tomato paste, olive oil, vegetable broth, cumin, coriander, paprika, salt, and black pepper until well combined.
- Pour the tomato mixture over the vegetables and chickpeas, stirring gently to coat everything evenly.
- Transfer the mixture to a baking dish and spread it out evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped fresh parsley.
- Serve warm, accompanied by crusty bread or couscous if desired.
