Ingredients

  • Zucchini - 150 grams, sliced
  • Eggplant - 150 grams, diced
  • Bell pepper (red or yellow) - 100 grams, chopped
  • Carrot - 100 grams, sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Canned chickpeas - 100 grams, drained and rinsed
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the zucchini, eggplant, bell pepper, carrot, onion, garlic, and chickpeas.
  3. In a separate small bowl, mix together the tomato paste, olive oil, vegetable broth, cumin, coriander, paprika, salt, and black pepper until well combined.
  4. Pour the tomato mixture over the vegetables and chickpeas, stirring gently to coat everything evenly.
  5. Transfer the mixture to a baking dish and spread it out evenly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
  8. Remove from the oven and let it cool for a few minutes before garnishing with chopped fresh parsley.
