Ingredients

  • Bell Peppers - 2 large (any color)
  • Long-grain rice - 100 grams
  • Cooked green lentils - 100 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetable broth - 250 milliliters
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a pot, heat the olive oil over medium heat and sauté the diced onion until translucent.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Stir in the diced tomato, cooked lentils, rice, parsley, mint, cumin, paprika, salt, and black pepper, and mix well.
  6. Pour in the vegetable broth and lemon juice, and bring to a simmer. Cover and cook for about 15 minutes until the rice is tender and the liquid is absorbed.
  7. Stuff the prepared bell peppers with the lentil and rice mixture, pressing down gently to pack it in.
  8. Place the stuffed peppers upright in a baking dish and add a little water to the bottom of the dish to keep them moist while baking.
  9. Cover with foil and bake in the preheated oven for 30 minutes.
  10. Remove the foil and bake for an additional 10 minutes to slightly brown the tops before serving.
