Ingredients
- Bell Peppers - 2 large (any color)
- Long-grain rice - 100 grams
- Cooked green lentils - 100 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Vegetable broth - 250 milliliters
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a pot, heat the olive oil over medium heat and sauté the diced onion until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced tomato, cooked lentils, rice, parsley, mint, cumin, paprika, salt, and black pepper, and mix well.
- Pour in the vegetable broth and lemon juice, and bring to a simmer. Cover and cook for about 15 minutes until the rice is tender and the liquid is absorbed.
- Stuff the prepared bell peppers with the lentil and rice mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish and add a little water to the bottom of the dish to keep them moist while baking.
- Cover with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes to slightly brown the tops before serving.
