Ingredients

  • All-purpose flour - 200 grams
  • Olive oil - 30 ml
  • Warm water - 100 ml
  • Salt - 1/2 teaspoon
  • Fresh spinach - 300 grams, chopped
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Sumac - 1 teaspoon
  • Pine nuts - 30 grams, toasted (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add olive oil and warm water, mixing until a soft dough forms. Knead for about 5 minutes until smooth, then cover and let rest for 20 minutes.
  2. In a skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the chopped spinach, parsley, mint, lemon juice, black pepper, and sumac to the skillet. Cook for another 5 minutes until the spinach is wilted. Remove from heat and let cool. Stir in toasted pine nuts if using.
  4. Preheat the oven to 180°C (350°F).
  5. Divide the dough into 4 equal pieces. Roll each piece into a thin circle on a floured surface.
  6. Place a generous spoonful of the spinach mixture into the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal tightly.
  7. Place the pies on a baking sheet lined with parchment paper. Brush the tops with a little olive oil.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown. Serve warm.
