Ingredients

  • Fresh spinach - 300 grams
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Pine nuts - 30 grams, toasted
  • Dill - 2 tablespoons, chopped
  • Parsley - 2 tablespoons, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1, beaten
  • Phyllo pastry sheets - 4 sheets
  • Butter - 30 grams, melted (for brushing)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes.
  3. Add the fresh spinach to the pan and cook until wilted, stirring occasionally, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the sautéed spinach mixture with crumbled feta cheese, toasted pine nuts, dill, parsley, black pepper, and salt. Mix well and then add the beaten egg to bind the filling.
  5. Lay one sheet of phyllo pastry on a clean surface and brush lightly with melted butter. Place a second sheet on top and repeat the brushing process.
  6. Spoon half of the spinach filling along one edge of the phyllo, then fold the sides over and roll it up tightly to form a log. Place the rolled pie seam-side down on a baking sheet lined with parchment paper.
  7. Repeat the process with the remaining phyllo and filling to create a second pie.
  8. Brush the tops of the pies with any remaining melted butter.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  10. Remove from the oven, allow to cool slightly, then slice and serve warm.
