Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Olive oil - 2 tablespoons
  • Instant yeast - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh spinach - 150 grams, chopped
  • Onion - 1 small, finely chopped
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 2 tablespoons (optional)
  • Sesame seeds - 1 tablespoon (for topping)

Steps

  1. In a mixing bowl, combine the flour, instant yeast, salt, olive oil, and warm water. Knead until a smooth dough forms, then cover and let it rise for 30 minutes.
  2. While the dough is rising, heat a pan over medium heat and add a little olive oil. Sauté the chopped onion until translucent, then add the chopped spinach and cook until wilted.
  3. Remove the pan from heat and mix in the lemon juice, sumac, salt, black pepper, and pine nuts (if using). Allow the filling to cool.
  4. Preheat your oven to 200°C (400°F).
  5. Once the dough has risen, divide it into 4 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  6. Place a spoonful of the spinach filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  7. Place the fatayers on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle with sesame seeds.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown. Serve warm.
