Ingredients

  • Basmati rice - 150 grams
  • Vermicelli noodles - 50 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chicken or vegetable broth - 400 milliliters
  • Ground cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes and drain.
  3. In a medium pot, heat the olive oil over medium heat, add the chopped onion, and sauté until translucent.
  4. Add the minced garlic and vermicelli noodles to the pot, stirring frequently until the vermicelli is golden brown.
  5. Add the soaked and drained rice, chicken or vegetable broth, ground cinnamon, allspice, salt, and black pepper to the pot. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 minutes.
  7. Remove from heat and let it sit covered for another 10 minutes.
  8. Transfer the rice and vermicelli mixture to a baking dish, spreading it evenly.
  9. Bake in the preheated oven for 15-20 minutes, or until the top is golden and the dish is heated through.
  10. Remove from the oven, sprinkle with fresh parsley, and serve warm.
