Ingredients

  • 2 large red bell peppers
  • 100 grams feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red bell peppers in half lengthwise and remove the seeds and stems.
  3. In a small bowl, mix the crumbled feta cheese, minced garlic, olive oil, dried oregano, salt, and black pepper until well combined.
  4. Place the red pepper halves cut-side up on a baking tray lined with parchment paper.
  5. Spoon the feta mixture evenly into each red pepper half.
  6. Drizzle a little olive oil over the stuffed peppers for added flavor.
  7. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the feta is golden.
