Ingredients
- Fine bulgur wheat - 100 grams
- Mushrooms (button or cremini) - 200 grams, finely chopped
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Pine nuts - 30 grams, toasted
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 200 milliliters
- Paprika - 1/2 teaspoon (for garnish)
- Lemon wedges - for serving
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the bulgur wheat with 200 milliliters of water and let it soak for 30 minutes until the water is absorbed.
- While the bulgur is soaking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the finely chopped mushrooms to the skillet and cook until they release their moisture and begin to brown, about 7-10 minutes. Stir in the ground cumin, ground cinnamon, salt, black pepper, and parsley, mixing well.
- Remove the skillet from heat and stir in the toasted pine nuts. Allow the mixture to cool slightly.
- Once the bulgur is ready, add the mushroom mixture to the soaked bulgur, mixing until well combined.
- Transfer half of the bulgur mixture to a greased baking dish, pressing it down to form an even layer.
- Spread the remaining bulgur mixture on top, pressing down gently.
- Score the top layer with a knife into diamond shapes for easy serving and sprinkle with paprika.
- Bake in the preheated oven for 30 minutes or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm with lemon wedges.
