Ingredients

  • Fine bulgur wheat - 100 grams
  • Mushrooms (button or cremini) - 200 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Pine nuts - 30 grams, toasted
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 200 milliliters
  • Paprika - 1/2 teaspoon (for garnish)
  • Lemon wedges - for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the bulgur wheat with 200 milliliters of water and let it soak for 30 minutes until the water is absorbed.
  3. While the bulgur is soaking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the finely chopped mushrooms to the skillet and cook until they release their moisture and begin to brown, about 7-10 minutes. Stir in the ground cumin, ground cinnamon, salt, black pepper, and parsley, mixing well.
  5. Remove the skillet from heat and stir in the toasted pine nuts. Allow the mixture to cool slightly.
  6. Once the bulgur is ready, add the mushroom mixture to the soaked bulgur, mixing until well combined.
  7. Transfer half of the bulgur mixture to a greased baking dish, pressing it down to form an even layer.
  8. Spread the remaining bulgur mixture on top, pressing down gently.
  9. Score the top layer with a knife into diamond shapes for easy serving and sprinkle with paprika.
  10. Bake in the preheated oven for 30 minutes or until the top is golden brown.
  11. Remove from the oven and let it cool for a few minutes before slicing. Serve warm with lemon wedges.
