Ingredients
- Red lentils - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Whole wheat breadcrumbs - 50 grams
- Egg - 1 large, beaten
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Rinse the red lentils under cold water, then cook them in a saucepan with 500ml of water for about 15 minutes or until soft. Drain and let cool slightly.
- In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, chopped parsley, cumin powder, coriander powder, salt, black pepper, olive oil, breadcrumbs, and beaten egg. Mix until well combined.
- Form the mixture into small patties, about the size of your palm, and place them on the prepared baking sheet.
- Brush the tops of the patties with a little additional olive oil for extra crispiness.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving. Enjoy with a side of yogurt or tahini sauce.
