- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
Steps
- Preheat your oven to 180°C (350°F).
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan over medium heat, heat the olive oil and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed rice, dried thyme, salt, and black pepper, cooking for about 2 minutes to lightly toast the rice.
- Add the water to the saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes until the water is absorbed.
- Remove from heat and fluff the rice with a fork. Stir in the chopped parsley, mint, and toasted pine nuts.
- Transfer the rice mixture into a baking dish, spreading it evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
- Remove from the oven, let it cool for a few minutes, and serve warm.
