Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the basmati rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan over medium heat, heat the olive oil and sauté the chopped onion until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Stir in the rinsed rice, dried thyme, salt, and black pepper, cooking for about 2 minutes to lightly toast the rice.
  6. Add the water to the saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes until the water is absorbed.
  7. Remove from heat and fluff the rice with a fork. Stir in the chopped parsley, mint, and toasted pine nuts.
  8. Transfer the rice mixture into a baking dish, spreading it evenly.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
  10. Remove from the oven, let it cool for a few minutes, and serve warm.
