Ingredients

  • Halloumi cheese - 250 grams
  • Cauliflower - 200 grams (riced)
  • Egg - 1 large
  • Almond flour - 50 grams
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1 small, diced
  • Zucchini - 1 small, diced
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a mixing bowl, combine the riced cauliflower, egg, almond flour, garlic powder, salt, and black pepper. Mix until a dough forms.
  3. Spread the cauliflower dough onto a baking sheet lined with parchment paper, shaping it into a pizza crust about 1 cm thick.
  4. Drizzle olive oil over the crust and bake in the preheated oven for 15 minutes, or until golden and firm.
  5. While the crust is baking, prepare the toppings. In a bowl, combine the cherry tomatoes, red bell pepper, zucchini, and dried oregano. Mix well.
  6. Remove the crust from the oven and evenly distribute the vegetable mixture on top.
  7. Slice the halloumi cheese into thin pieces and layer them over the vegetables.
  8. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the halloumi is golden and slightly melted.
  9. Remove from the oven, sprinkle with fresh basil, slice, and serve hot.
