- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon

- Black pepper - ½ teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine zucchini, bell pepper, cherry tomatoes, red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil, lemon juice, salt, and pepper. Toss to coat the vegetables evenly.
