  • Bell pepper (any color) - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine zucchini, bell pepper, cherry tomatoes, red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil, lemon juice, salt, and pepper. Toss to coat the vegetables evenly.
