Ingredients

  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix tahini, lemon juice, minced garlic, olive oil, paprika, salt, and black pepper until smooth.
  3. Place the fish fillets on a baking sheet lined with parchment paper. Pour half of the tahini mixture over the fish, spreading it evenly.
  4. In a mixing bowl, combine the cherry tomatoes, zucchini, and bell pepper. Drizzle with olive oil, salt, and pepper, then toss to coat.
  5. Spread the vegetables around the fish on the baking sheet.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
  7. Remove from the oven and drizzle the remaining tahini sauce over the fish.
  8. Garnish with chopped parsley before serving.
