Ingredients

  • White fish fillets (e.g., cod or tilapia) - 300 grams
  • Fresh parsley - 30 grams (1 cup, chopped)
  • Fresh cilantro - 30 grams (1 cup, chopped)
  • Garlic - 3 cloves (minced)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams (halved)
  • Red onion - 1 small (sliced)
  • Lemon slices - 2 (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the chopped parsley, cilantro, minced garlic, cumin, coriander, paprika, cayenne, lemon juice, olive oil, salt, and black pepper to make the chermoula sauce.
  3. Place the fish fillets in a baking dish and coat them generously with the chermoula sauce. Let it marinate for about 10 minutes while the oven heats.
  4. Arrange the halved cherry tomatoes and sliced red onion around the fish in the baking dish.
  5. Drizzle a little more olive oil over the vegetables and season with a pinch of salt and pepper.
  6. Bake in the preheated oven for 20 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Serve the baked fish garnished with lemon slices and extra fresh herbs if desired.
