- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams (halved)
- Red onion - 1 small (sliced)
- Lemon slices - 2 (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the chopped parsley, cilantro, minced garlic, cumin, coriander, paprika, cayenne, lemon juice, olive oil, salt, and black pepper to make the chermoula sauce.
- Place the fish fillets in a baking dish and coat them generously with the chermoula sauce. Let it marinate for about 10 minutes while the oven heats.
- Arrange the halved cherry tomatoes and sliced red onion around the fish in the baking dish.
- Drizzle a little more olive oil over the vegetables and season with a pinch of salt and pepper.
- Bake in the preheated oven for 20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve the baked fish garnished with lemon slices and extra fresh herbs if desired.
