Ingredients
- White fish fillets (e.g., cod or haddock) - 300 grams
- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes. Once cooked, blend in a food processor until it resembles rice.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the cumin, coriander, paprika, salt, and pepper to the skillet, stirring well to combine, then remove from heat.
- In a baking dish, place the steamed cauliflower rice at the bottom and spread it out evenly. Lay the fish fillets on top of the cauliflower rice.
- Drizzle the remaining tablespoon of olive oil and lemon juice over the fish. Spoon the onion and spice mixture over the fish fillets.
- Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Garnish with chopped parsley before serving.
