- Basmati rice - 150 grams
- Vegetable broth - 300 ml
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Cinnamon - ¼ teaspoon

- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in the cumin, coriander, paprika, salt, black pepper, and cinnamon. Cook for 1-2 minutes until the spices are well combined.
- Add the basmati rice to the skillet and stir to coat the rice with the spice mixture.
- Pour in the vegetable broth and bring it to a gentle boil. Once boiling, reduce the heat, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, season the fish fillets with salt, black pepper, and lemon juice.
- In a baking dish, spread the cooked rice evenly and place the seasoned fish fillets on top.
- Drizzle the remaining tablespoon of olive oil over the fish and rice. Cover the dish with aluminum foil.
- Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 5-10 minutes until the fish is cooked through and flakes easily.
- Garnish with chopped parsley before serving.
