Ingredients

  • White fish fillets (e.g., cod or haddock) - 300 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Basmati rice - 150 grams
  • Vegetable broth - 300 ml
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Cinnamon - ¼ teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the cumin, coriander, paprika, salt, black pepper, and cinnamon. Cook for 1-2 minutes until the spices are well combined.
  5. Add the basmati rice to the skillet and stir to coat the rice with the spice mixture.
  6. Pour in the vegetable broth and bring it to a gentle boil. Once boiling, reduce the heat, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, season the fish fillets with salt, black pepper, and lemon juice.
  8. In a baking dish, spread the cooked rice evenly and place the seasoned fish fillets on top.
  9. Drizzle the remaining tablespoon of olive oil over the fish and rice. Cover the dish with aluminum foil.
  10. Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 5-10 minutes until the fish is cooked through and flakes easily.
  11. Garnish with chopped parsley before serving.
