Ingredients

  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Bell pepper (any color) - 1 small, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix olive oil, minced garlic, lemon juice, chopped parsley, cumin, paprika, salt, and black pepper to create a marinade.
  3. Place the fish fillets in a baking dish and pour the marinade over them, making sure to coat the fish evenly. Let it marinate for 10-15 minutes.
  4. Arrange sliced tomatoes, red onion, and bell pepper on top of the marinated fish.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  6. Remove the foil and bake for an additional 5-10 minutes, until the fish is cooked through and flakes easily with a fork.
  7. Serve hot, garnished with additional parsley if desired.
