- Fennel bulbs - 2 medium
- Olive oil - 2 tablespoons
- Lemon - 1 medium (zest and juice)
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 ml
Steps
- Preheat the oven to 200°C (400°F).
- Trim the fennel bulbs by cutting off the tops and the root end, then slice them into quarters.
- In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, salt, and black pepper.
- Add the fennel quarters to the bowl and toss well to coat them evenly with the mixture.
- Place the fennel in a baking dish and pour the water around the fennel to help with steaming.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the fennel is tender and slightly caramelized.
- Remove from the oven and let cool for a few minutes before serving.
