- Dried fava beans - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Water - 500 ml
Steps
- Rinse the dried fava beans under cold water and soak them in a bowl with water for at least 8 hours or overnight.
- Preheat your oven to 180°C (350°F).
- Drain the soaked fava beans and place them in a pot with 500 ml of fresh water. Bring to a boil, then reduce the heat and simmer for 30 minutes or until they are tender. Drain and set aside.
- In a mixing bowl, combine the cooked fava beans, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper. Mix well to coat the beans evenly with the spices.
- Transfer the seasoned fava beans to a baking dish and spread them out evenly. Bake in the preheated oven for 20-25 minutes, or until the beans are slightly crispy on the edges.
- Once baked, remove from the oven and drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
