Ingredients

  • Dried fava beans - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Water - 500 ml

Steps

  1. Rinse the dried fava beans under cold water and soak them in a bowl with water for at least 8 hours or overnight.
  2. Preheat your oven to 180°C (350°F).
  3. Drain the soaked fava beans and place them in a pot with 500 ml of fresh water. Bring to a boil, then reduce the heat and simmer for 30 minutes or until they are tender. Drain and set aside.
  4. In a mixing bowl, combine the cooked fava beans, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper. Mix well to coat the beans evenly with the spices.
  5. Transfer the seasoned fava beans to a baking dish and spread them out evenly. Bake in the preheated oven for 20-25 minutes, or until the beans are slightly crispy on the edges.
  6. Once baked, remove from the oven and drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
