Ingredients
- Basmati rice - 100 grams
- Ground lamb or beef - 150 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Yogurt - 150 grams, plain
- Lemon juice - 1 tablespoon
- Pine nuts - 20 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic, ground meat, cinnamon, allspice, salt, and black pepper to the skillet. Cook until the meat is browned, about 8-10 minutes. Remove from heat.
- In a pot, bring 200 ml of water to a boil. Add the soaked rice, cover, and simmer on low heat for 15 minutes or until the rice is cooked and fluffy.
- In a bowl, mix the yogurt with lemon juice and season with a pinch of salt.
- In a baking dish, layer half of the rice at the bottom, followed by the meat mixture, and then the remaining rice on top.
- Spread the yogurt mixture over the top layer of rice evenly.
- Sprinkle toasted pine nuts and chopped parsley on top.
- Bake in the preheated oven for 20 minutes, until the top is slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
