Ingredients

  • Basmati rice - 100 grams
  • Ground lamb or beef - 150 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Yogurt - 150 grams, plain
  • Lemon juice - 1 tablespoon
  • Pine nuts - 20 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  4. Add minced garlic, ground meat, cinnamon, allspice, salt, and black pepper to the skillet. Cook until the meat is browned, about 8-10 minutes. Remove from heat.
  5. In a pot, bring 200 ml of water to a boil. Add the soaked rice, cover, and simmer on low heat for 15 minutes or until the rice is cooked and fluffy.
  6. In a bowl, mix the yogurt with lemon juice and season with a pinch of salt.
  7. In a baking dish, layer half of the rice at the bottom, followed by the meat mixture, and then the remaining rice on top.
  8. Spread the yogurt mixture over the top layer of rice evenly.
  9. Sprinkle toasted pine nuts and chopped parsley on top.
  10. Bake in the preheated oven for 20 minutes, until the top is slightly golden.
  11. Remove from the oven and let it cool for a few minutes before serving.
