Ingredients

  • Eggs - 4 large
  • Tomatoes - 200 grams, diced
  • Bell pepper - 100 grams, diced
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium oven-safe skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  4. Stir in the diced tomatoes and bell pepper, cooking for another 5-7 minutes until softened.
  5. Season the mixture with salt, black pepper, and paprika, then stir to combine.
  6. Create four small wells in the vegetable mixture and crack an egg into each well.
  7. If using, sprinkle crumbled feta cheese over the eggs.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set to your liking.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
