- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a medium oven-safe skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced tomatoes and bell pepper, cooking for another 5-7 minutes until softened.
- Season the mixture with salt, black pepper, and paprika, then stir to combine.
- Create four small wells in the vegetable mixture and crack an egg into each well.
- If using, sprinkle crumbled feta cheese over the eggs.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set to your liking.
