Ingredients
- Eggplant - 1 medium (about 300g)
- Cauliflower rice - 200g
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for about 15 minutes to draw out moisture, then rinse and pat dry.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant. Stir in the cauliflower rice, ground cumin, ground coriander, paprika, salt, and pepper. Cook for 5-7 minutes until the cauliflower is tender. Remove from heat and stir in chopped parsley and lemon juice.
- On a baking sheet lined with parchment paper, arrange the eggplant slices in a single layer. Brush both sides with the remaining olive oil and season with salt and pepper.
- Bake the eggplant in the preheated oven for about 20 minutes, flipping halfway through, until golden brown and tender.
- To serve, layer the cauliflower rice mixture on a plate and top with the baked eggplant slices. Garnish with additional parsley if desired.
