- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 large, chopped
- Vegetable broth - 250 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe skillet, heat olive oil over medium heat, then add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and bell pepper, cooking for an additional 5 minutes until the vegetables start to soften.
- Add the chopped tomato, drained chickpeas, vegetable broth, cumin, coriander, paprika, salt, and black pepper to the skillet. Stir well to combine.
- Bring the mixture to a simmer, then cover and transfer the skillet to the preheated oven.
- Bake for 25 minutes, then remove from the oven and stir in the chopped parsley and lemon juice.
- Serve hot, garnished with additional parsley if desired.
