Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 large, chopped
  • Vegetable broth - 250 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe skillet, heat olive oil over medium heat, then add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and bell pepper, cooking for an additional 5 minutes until the vegetables start to soften.
  4. Add the chopped tomato, drained chickpeas, vegetable broth, cumin, coriander, paprika, salt, and black pepper to the skillet. Stir well to combine.
  5. Bring the mixture to a simmer, then cover and transfer the skillet to the preheated oven.
  6. Bake for 25 minutes, then remove from the oven and stir in the chopped parsley and lemon juice.
  7. Serve hot, garnished with additional parsley if desired.
