Ingredients

  • Chicken thighs - 300 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, diced
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Fresh parsley - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large oven-safe dish, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced tomato and cook for 2-3 minutes until softened.
  5. Add the ground cumin, coriander, paprika, salt, black pepper, and cinnamon, stirring to combine the spices with the onion and tomato mixture.
  6. Add the basmati rice to the dish, stirring to coat the rice with the spice mixture.
  7. Pour in the chicken broth and bring to a simmer for 5 minutes.
  8. Place the chicken thighs on top of the rice mixture, and drizzle with lemon juice.
  9. Cover the dish with aluminum foil and transfer it to the preheated oven.
  10. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the chicken is cooked through and the rice is tender.
  11. Garnish with chopped parsley before serving.
