- Basmati rice - 150 grams

- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Fresh parsley - a handful, chopped
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- In a large oven-safe dish, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced tomato and cook for 2-3 minutes until softened.
- Add the ground cumin, coriander, paprika, salt, black pepper, and cinnamon, stirring to combine the spices with the onion and tomato mixture.
- Add the basmati rice to the dish, stirring to coat the rice with the spice mixture.
- Pour in the chicken broth and bring to a simmer for 5 minutes.
- Place the chicken thighs on top of the rice mixture, and drizzle with lemon juice.
- Cover the dish with aluminum foil and transfer it to the preheated oven.
- Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the chicken is cooked through and the rice is tender.
- Garnish with chopped parsley before serving.
