- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 30 grams, toasted
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated, and let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
- Place the marinated chicken thighs in a baking dish and pour any remaining marinade over them.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Once cooked, remove from the oven and let the chicken rest for 5 minutes.
