Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well-coated, and let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. Place the marinated chicken thighs in a baking dish and pour any remaining marinade over them.
  5. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  6. Once cooked, remove from the oven and let the chicken rest for 5 minutes.
  7. Serve the baked chicken garnished with chopped fresh parsley and toasted pine nuts.
