Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Zaatar - 10 grams
  • Feta cheese - 75 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Greek yogurt - 50 grams
  • Black olives - 30 grams, sliced

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in a lightly greased bowl, cover, and let rise for 30 minutes.
  4. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  5. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a flat round shape (about 20 cm in diameter).
  6. Spread Greek yogurt evenly over the surface of each dough round, leaving a small border around the edges.
  7. Sprinkle crumbled feta and shredded mozzarella cheese on top, then add zaatar and sliced black olives.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbly.
  9. Remove from the oven, allow to cool slightly, then slice and serve warm.
