Ingredients

  • Phyllo dough - 4 sheets
  • Ricotta cheese - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Mozzarella cheese - 50 grams, shredded
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the ricotta, feta, mozzarella, parsley, mint, egg, salt, and black pepper. Mix until well combined.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush with more olive oil.
  4. Cut the layered phyllo dough into strips about 10 cm wide.
  5. Place a tablespoon of the cheese mixture at one end of each strip. Fold the sides over to encase the filling, then roll it up tightly to form a closed pastry.
  6. Repeat this process with the remaining phyllo dough and filling.
  7. Place the boureks on a baking sheet lined with parchment paper, seam side down. Brush the tops with olive oil.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  9. Remove from the oven and allow to cool slightly before serving.
