Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Lemon juice - 1 tablespoon
- Pine nuts - 30g (toasted, for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains.
- In a large skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent (about 5 minutes).
- Add the minced garlic to the skillet and sauté for an additional 1 minute.
- Stir in the cauliflower rice, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove the skillet from heat and mix in the chopped parsley and lemon juice.
- Transfer the cauliflower rice mixture to a baking dish and spread it evenly.
- Bake in the preheated oven for 20 minutes, until slightly golden on top.
- Remove from the oven and garnish with toasted pine nuts before serving.
