Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30g (toasted, for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice grains.
  4. In a large skillet, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent (about 5 minutes).
  5. Add the minced garlic to the skillet and sauté for an additional 1 minute.
  6. Stir in the cauliflower rice, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  7. Remove the skillet from heat and mix in the chopped parsley and lemon juice.
  8. Transfer the cauliflower rice mixture to a baking dish and spread it evenly.
  9. Bake in the preheated oven for 20 minutes, until slightly golden on top.
  10. Remove from the oven and garnish with toasted pine nuts before serving.
