Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tahini - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
  3. In a small bowl, whisk together olive oil, minced garlic, ground cumin, paprika, salt, and black pepper.
  4. Pour the spice mixture over the cauliflower and toss until the florets are evenly coated.
  5. Spread the seasoned cauliflower on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through.
  7. While the cauliflower is baking, prepare the tahini sauce by mixing tahini, lemon juice, and a couple of tablespoons of water until smooth and creamy.
  8. Once the cauliflower is done, remove it from the oven and drizzle the tahini sauce over the top.
  9. Garnish with chopped fresh parsley before serving.
