- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tahini - 4 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
- In a small bowl, whisk together olive oil, minced garlic, ground cumin, paprika, salt, and black pepper.
- Pour the spice mixture over the cauliflower and toss until the florets are evenly coated.
- Spread the seasoned cauliflower on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through.
- While the cauliflower is baking, prepare the tahini sauce by mixing tahini, lemon juice, and a couple of tablespoons of water until smooth and creamy.
- Once the cauliflower is done, remove it from the oven and drizzle the tahini sauce over the top.
- Garnish with chopped fresh parsley before serving.
