Ingredients

  • Eggplant - 250 grams
  • Tahini - 30 grams
  • Olive oil - 15 ml
  • Garlic - 1 clove
  • Lemon juice - 15 ml
  • Salt - 1/2 teaspoon
  • Cumin - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Fresh parsley - 5 grams (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Pierce the eggplant several times with a fork and place it on a baking sheet.
  3. Roast the eggplant in the oven for 25-30 minutes, or until the skin is charred and the flesh is soft.
  4. Once cooked, let the eggplant cool for a few minutes, then scoop out the flesh into a mixing bowl.
  5. Add tahini, olive oil, minced garlic, lemon juice, salt, and cumin to the eggplant flesh.
  6. Use a fork or a blender to mix until smooth and creamy.
  7. Taste and adjust seasoning if necessary.
  8. While preparing the dip, warm the pita bread in the oven for the last 5 minutes of the eggplant roasting.
  9. Serve the Baba Ghanoush in a bowl, drizzled with extra olive oil and garnished with chopped parsley, alongside warm pita bread.
