Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bread crumbs - 1/4 cup
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Red onion - 1/4, thinly sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the eggplant in half lengthwise and drizzle the cut sides with 1 tablespoon of olive oil.
  3. Place the eggplant halves cut-side down on a baking sheet and roast in the oven for about 25-30 minutes, or until the flesh is soft and slightly charred.
  4. Once roasted, scoop the flesh out of the eggplant and place it in a mixing bowl.
  5. Add tahini, lemon juice, minced garlic, cumin, salt, and black pepper to the eggplant, and mash everything together until smooth.
  6. Stir in the bread crumbs and chopped parsley until well combined.
  7. Form the mixture into two patties and refrigerate for about 10 minutes to firm up.
  8. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  9. Toast the whole wheat burger buns in the skillet or oven until lightly golden.
  10. Assemble the burgers by placing a patty on each bun, and topping with sliced tomato, cucumber, and red onion.
