Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bread crumbs - 1/4 cup
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat burger buns - 2
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Red onion - 1/4, thinly sliced
Steps
- Preheat your oven to 200°C (400°F).
- Cut the eggplant in half lengthwise and drizzle the cut sides with 1 tablespoon of olive oil.
- Place the eggplant halves cut-side down on a baking sheet and roast in the oven for about 25-30 minutes, or until the flesh is soft and slightly charred.
- Once roasted, scoop the flesh out of the eggplant and place it in a mixing bowl.
- Add tahini, lemon juice, minced garlic, cumin, salt, and black pepper to the eggplant, and mash everything together until smooth.
- Stir in the bread crumbs and chopped parsley until well combined.
- Form the mixture into two patties and refrigerate for about 10 minutes to firm up.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- Toast the whole wheat burger buns in the skillet or oven until lightly golden.
- Assemble the burgers by placing a patty on each bun, and topping with sliced tomato, cucumber, and red onion.
