Ingredients
- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons (30g)
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons (30ml)
- Olive oil - 1 tablespoon (15ml)
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
- Pita bread - 2 pieces (for serving)
Steps
- Preheat the oven to 220°C (425°F).
- Pierce the eggplant several times with a fork to prevent it from bursting while roasting.
- Place the eggplant on a baking sheet and roast in the oven for about 25 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplant from the oven and allow it to cool for a few minutes.
- Once cooled, scoop out the flesh of the eggplant and place it in a mixing bowl.
- Add tahini, minced garlic, lemon juice, olive oil, cumin, salt, and black pepper to the eggplant flesh.
- Using a fork or a food processor, blend the ingredients until smooth and creamy, adjusting seasoning to taste.
- Transfer the Baba Ghanoush to a serving bowl and drizzle with a little extra olive oil on top.
- Garnish with chopped parsley and serve with warm pita bread.
