Ingredients
- Eggplant - 200 grams
- Tahini - 2 tablespoons
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Ground cumin - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Pita bread - 2 pieces
Steps
- Preheat your oven to 200°C (400°F).
- Prick the eggplant with a fork in several places to allow steam to escape.
- Place the eggplant on a baking sheet and roast in the oven for 30-35 minutes, turning occasionally, until the skin is charred and the flesh is soft.
- Remove the eggplant from the oven and let it cool for a few minutes.
- Once cooled, cut the eggplant in half and scoop out the flesh into a bowl, discarding the skin.
- Add tahini, minced garlic, lemon juice, olive oil, salt, and ground cumin to the bowl with the eggplant flesh.
- Using a fork or a food processor, blend the ingredients until smooth and creamy.
- Taste and adjust seasoning if necessary.
- Transfer the Baba Ghanouj to a serving bowl and drizzle with a little extra olive oil.
- Garnish with chopped parsley and serve with warm pita bread.
