Ingredients

  • Eggplant - 300 grams
  • Tahini - 2 tablespoons (30 grams)
  • Olive oil - 2 tablespoons (30 ml)
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon (15 ml)
  • Salt - 1/2 teaspoon (2.5 grams)
  • Cumin - 1/4 teaspoon (1 gram)
  • Paprika - 1/4 teaspoon (1 gram)
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Pierce the eggplant several times with a fork and place it on a baking sheet.
  3. Roast the eggplant in the oven for about 25 minutes, or until the skin is charred and the flesh is soft.
  4. Remove the eggplant from the oven, let it cool slightly, then peel off the skin and discard it.
  5. In a mixing bowl, combine the roasted eggplant flesh, tahini, olive oil, minced garlic, lemon juice, salt, cumin, and paprika.
  6. Mash the ingredients together using a fork or a food processor until smooth and creamy.
  7. Taste and adjust seasoning if necessary.
  8. Transfer the Baba Ganoush to a serving bowl, drizzle with a little extra olive oil, and garnish with fresh parsley.
