- Eggplant - 300 grams
- Tahini - 2 tablespoons (30 grams)
- Olive oil - 2 tablespoons (30 ml)
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon (15 ml)
- Salt - 1/2 teaspoon (2.5 grams)
- Cumin - 1/4 teaspoon (1 gram)
- Paprika - 1/4 teaspoon (1 gram)
- Fresh parsley - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- Pierce the eggplant several times with a fork and place it on a baking sheet.
- Roast the eggplant in the oven for about 25 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplant from the oven, let it cool slightly, then peel off the skin and discard it.
- In a mixing bowl, combine the roasted eggplant flesh, tahini, olive oil, minced garlic, lemon juice, salt, cumin, and paprika.
- Mash the ingredients together using a fork or a food processor until smooth and creamy.
- Taste and adjust seasoning if necessary.
- Transfer the Baba Ganoush to a serving bowl, drizzle with a little extra olive oil, and garnish with fresh parsley.
