Ingredients
- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons (30g)
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon (15ml)
- Olive oil - 1 tablespoon (15ml)
- Salt - 1/2 teaspoon (3g)
- Cumin - 1/4 teaspoon (1g)
- Black pepper - 1/4 teaspoon (1g)
- Burger buns - 2 whole grain (or your choice)
- Cucumber - 1/2, sliced
- Tomato - 1 medium, sliced
- Red onion - 1/4, thinly sliced
- Pomegranate seeds - 2 tablespoons (30g)
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant in half lengthwise and place it on a baking sheet, cut side up.
- Drizzle 1 tablespoon of olive oil over the eggplant halves and sprinkle with salt.
- Roast in the preheated oven for about 25-30 minutes or until the eggplant is soft and starts to brown.
- Remove the eggplant from the oven and let it cool slightly before scooping the flesh into a mixing bowl.
- Add tahini, minced garlic, lemon juice, cumin, black pepper, and remaining salt to the eggplant flesh. Mash or blend until smooth and creamy.
- Toast the burger buns lightly in a pan or in the oven for a few minutes.
- Spread a generous amount of baba ganoush on the bottom half of each burger bun.
- Top with cucumber slices, tomato slices, red onion, and a sprinkle of pomegranate seeds.
- Garnish with chopped parsley and place the top half of the bun over the vegetables. Serve immediately.
