Ingredients

  • Eggplant - 1 medium (about 250g)
  • Tahini - 2 tablespoons (30g)
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon (15ml)
  • Olive oil - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon (3g)
  • Cumin - 1/4 teaspoon (1g)
  • Black pepper - 1/4 teaspoon (1g)
  • Burger buns - 2 whole grain (or your choice)
  • Cucumber - 1/2, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Pomegranate seeds - 2 tablespoons (30g)
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant in half lengthwise and place it on a baking sheet, cut side up.
  3. Drizzle 1 tablespoon of olive oil over the eggplant halves and sprinkle with salt.
  4. Roast in the preheated oven for about 25-30 minutes or until the eggplant is soft and starts to brown.
  5. Remove the eggplant from the oven and let it cool slightly before scooping the flesh into a mixing bowl.
  6. Add tahini, minced garlic, lemon juice, cumin, black pepper, and remaining salt to the eggplant flesh. Mash or blend until smooth and creamy.
  7. Toast the burger buns lightly in a pan or in the oven for a few minutes.
  8. Spread a generous amount of baba ganoush on the bottom half of each burger bun.
  9. Top with cucumber slices, tomato slices, red onion, and a sprinkle of pomegranate seeds.
  10. Garnish with chopped parsley and place the top half of the bun over the vegetables. Serve immediately.
