Ingredients

  • semolina - 100 grams
  • all-purpose flour - 50 grams
  • baking powder - 1 teaspoon
  • date syrup - 50 grams
  • coconut milk - 150 milliliters
  • olive oil - 2 tablespoons
  • ground cardamom - 1/2 teaspoon
  • chopped walnuts - 30 grams
  • chopped pistachios - 20 grams
  • salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish.
  2. In a large mixing bowl, combine semolina, all-purpose flour, baking powder, ground cardamom, and salt.
  3. In another bowl, whisk together date syrup, coconut milk, and olive oil until well blended.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in the chopped walnuts and half of the chopped pistachios.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Sprinkle the remaining pistachios on top for decoration.
  8. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
