Ingredients

  • All-purpose flour - 100 grams
  • Water - 250 ml
  • Yeast - 1 teaspoon
  • Sugar - 1 tablespoon
  • Salt - a pinch
  • Ground almonds - 50 grams
  • Ground walnuts - 50 grams
  • Sugar (for filling) - 2 tablespoons
  • Cinnamon powder - 1/2 teaspoon
  • Rose water - 1 teaspoon
  • Pistachios (for garnish) - 20 grams
  • Honey - for drizzling (optional)

Steps

  1. In a bowl, mix the all-purpose flour, water, yeast, sugar, and salt to form a smooth batter. Let it rest for 20 minutes until bubbles form on the surface.
  2. While the batter is resting, prepare the filling by combining ground almonds, ground walnuts, sugar, cinnamon, and rose water in a bowl. Mix well and set aside.
  3. Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter onto the skillet to form a pancake. Cook until bubbles form on the surface and the edges look dry (about 2-3 minutes). Do not flip the pancake.
  4. Remove the pancake and place it on a clean towel. Repeat the process with the remaining batter, stacking the pancakes on top of each other.
  5. Once all pancakes are cooked, take one pancake, place a tablespoon of the nut filling in the center, and fold the pancake in half, pressing the edges to seal. Repeat for all pancakes.
  6. Serve the Atayef Asafiri on a plate, garnished with crushed pistachios and drizzled with honey if desired.
