Ingredients
- All-purpose flour - 100 grams
- Warm water - 200 ml
- Baking powder - 1 teaspoon
- Sugar - 1 tablespoon
- Salt - a pinch
- Ground walnuts - 50 grams
- Ground cinnamon - 1/2 teaspoon
- Maple syrup - 2 tablespoons
- Chopped pistachios - 20 grams
- Powdered sugar - for dusting
Steps
- In a mixing bowl, combine the all-purpose flour, warm water, baking powder, sugar, and salt. Whisk until the batter is smooth and well combined.
- Let the batter rest for about 10 minutes while you prepare the filling.
- In another bowl, mix the ground walnuts, ground cinnamon, and maple syrup until well combined.
- Heat a non-stick skillet over medium heat. Pour a small ladleful of the batter onto the skillet to form a pancake, approximately 10 cm in diameter.
- Cook for about 2-3 minutes or until bubbles form on the surface and the edges look set. Do not flip the pancake; instead, remove it from the skillet and place it on a clean plate.
- Repeat the process with the remaining batter, stacking the pancakes on top of each other with a clean kitchen towel in between to keep them warm.
- Once all the pancakes are done, take one pancake, place a spoonful of the walnut filling in the center, and fold it in half to form a half-moon shape. Pinch the edges to seal.
- Repeat with the remaining pancakes and filling.
- Serve warm, dusted with powdered sugar and topped with chopped pistachios.
