Almond Cookies

- Almond flour - 150 grams
- Powdered sugar - 50 grams
- Egg white - 1 large
- Almond extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Whole almonds - 12 pieces (for topping)
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, powdered sugar, and salt, and mix well.
- In another bowl, whisk the egg white until it becomes frothy but not stiff.
- Add the frothy egg white and almond extract to the dry ingredients and mix until a sticky dough forms.
- Using your hands, form small balls (about 20 grams each) and place them on the prepared baking sheet, spacing them a few centimeters apart.
- Press a whole almond into the center of each cookie.
- Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
