Almond Cookies

Ingredients

  • Almond flour - 150 grams
  • Powdered sugar - 50 grams
  • Egg white - 1 large
  • Almond extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Whole almonds - 12 pieces (for topping)

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, powdered sugar, and salt, and mix well.
  3. In another bowl, whisk the egg white until it becomes frothy but not stiff.
  4. Add the frothy egg white and almond extract to the dry ingredients and mix until a sticky dough forms.
  5. Using your hands, form small balls (about 20 grams each) and place them on the prepared baking sheet, spacing them a few centimeters apart.
  6. Press a whole almond into the center of each cookie.
  7. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
