Steps
- Begin by peeling the arrowroot and cutting it into thin strips about 5 cm long.
- Bring a pot of water to a boil and blanch the arrowroot strips for about 3 minutes until they are tender but still slightly crunchy.
- Remove the arrowroot from the boiling water and immediately transfer it to an ice bath to stop the cooking process. Drain well after a few minutes.
- In a mixing bowl, combine the minced garlic, sesame oil, soy sauce, rice vinegar, and sugar. Whisk until the sugar is dissolved.
- Add the blanched arrowroot, julienned carrot, and cucumber to the bowl with the dressing. Gently toss to ensure everything is evenly coated.
- Allow the mixture to marinate for about 10 minutes to enhance the flavors.
- Serve the dish in a bowl, garnished with toasted sesame seeds and chopped green onion.
