Ingredients

  • Lotus root - 250 grams
  • Soy sauce - 2 tablespoons
  • Vegetable stock - 200 ml
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sugar - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Red pepper flakes - 1 teaspoon
  • Salt - to taste

Steps

  1. Peel the lotus root and slice it into 0.5 cm thick rounds.
  2. In a pot, combine the sliced lotus root, soy sauce, vegetable stock, sesame oil, minced garlic, grated ginger, and sugar.
  3. Bring the mixture to a boil over medium heat, then reduce to a simmer.
  4. Cover the pot and let it simmer for about 20 minutes, or until the lotus root is tender.
  5. Stir in the chopped green onions and red pepper flakes, and continue to simmer for another 5 minutes.
  6. Taste and adjust the seasoning with salt if necessary.
  7. Serve hot, garnished with sesame seeds.
