Steps
- Peel the lotus root and slice it into 0.5 cm thick rounds.
- In a pot, combine the sliced lotus root, soy sauce, vegetable stock, sesame oil, minced garlic, grated ginger, and sugar.
- Bring the mixture to a boil over medium heat, then reduce to a simmer.
- Cover the pot and let it simmer for about 20 minutes, or until the lotus root is tender.
- Stir in the chopped green onions and red pepper flakes, and continue to simmer for another 5 minutes.
- Taste and adjust the seasoning with salt if necessary.
- Serve hot, garnished with sesame seeds.
