Ingredients
- Young radish greens - 200 grams
- Water - 500 ml
- Coarse sea salt - 30 grams
- Garlic - 4 cloves, minced
- Ginger - 1 teaspoon, grated
- Korean red pepper flakes (gochugaru) - 2 tablespoons
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Vinegar - 1 tablespoon
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
Steps
- Wash the young radish greens thoroughly under cold water and drain.
- In a large bowl, dissolve the coarse sea salt in 500 ml of water to create a brine.
- Add the washed radish greens to the brine and let them soak for about 15 minutes.
- In a separate bowl, combine minced garlic, grated ginger, gochugaru, sugar, soy sauce, and vinegar to make the kimchi paste.
- After 15 minutes, drain the radish greens and gently squeeze out excess water.
- Mix the drained radish greens with the kimchi paste until evenly coated.
- Transfer the mixture to a clean jar and press down to remove air pockets.
- Sprinkle sesame seeds and chopped green onions on top.
- Let the kimchi sit at room temperature for about 10 minutes, then refrigerate for at least 1 hour before serving.
