Ingredients
- Sweet rice (glutinous rice) - 100g
- Water - 250ml
- Brown sugar - 30g
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Walnuts (chopped) - 20g
- Dried jujubes (sliced) - 30g
- Dried apricots (chopped) - 20g
- Cinnamon powder - 1/2 teaspoon
- Salt - a pinch
Steps
- Rinse the sweet rice under cold water until the water runs clear, then soak it in water for at least 1 hour.
- Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam for about 30 minutes until fully cooked and sticky.
- In a separate bowl, mix the brown sugar, soy sauce, sesame oil, cinnamon powder, and a pinch of salt until well combined.
- In a large mixing bowl, combine the steamed rice with the sugar mixture, walnuts, dried jujubes, and dried apricots. Stir until everything is coated well.
- Transfer the mixture into a small, greased square dish or mold, pressing it down firmly.
- Let the yaksik cool at room temperature for about 10-15 minutes, then refrigerate for at least 30 minutes to set.
- Once set, cut into squares or slices and serve cold or at room temperature.
