Ingredients

  • Cooked sushi rice - 150 grams
  • Nori sheets - 2 sheets
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Spinach - 50 grams, blanched
  • Avocado - 1 medium, sliced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Rice vinegar - 1 teaspoon
  • Salt - to taste
  • Black sesame seeds - 1 tablespoon
  • Burger buns - 2
  • Mayonnaise - 2 tablespoons
  • Sriracha - 1 teaspoon (optional)

Steps

  1. In a bowl, mix the cooked sushi rice with soy sauce, sesame oil, rice vinegar, and a pinch of salt until well combined.
  2. Lay a nori sheet on a bamboo mat or clean surface, shiny side down. Spread half of the rice mixture evenly over the nori, leaving a 2 cm border at the top.
  3. Arrange half of the julienned carrot, cucumber, blanched spinach, and avocado slices over the rice.
  4. Sprinkle black sesame seeds over the vegetables.
  5. Using the bamboo mat, roll the nori tightly away from you, pressing gently to secure the filling. Seal the edge with a bit of water.
  6. Repeat the process with the second nori sheet and the remaining ingredients.
  7. Once both rolls are made, slice each roll into 6 pieces.
  8. Toast the burger buns lightly on a pan until golden.
  9. Spread mayonnaise on the bottom half of each bun and add 3 kimbap pieces on top.
  10. Drizzle sriracha on top if desired, then place the top half of the bun on.
  11. Serve immediately with additional vegetables or pickles on the side.
