Ingredients

  • All-purpose flour - 100g
  • Water - 150ml
  • Egg - 1 large
  • Salt - 1/2 tsp
  • Zucchini - 50g, grated
  • Carrot - 50g, grated
  • Red bell pepper - 50g, diced
  • Green onions - 2, chopped
  • Mushrooms - 50g, sliced
  • Vegetable oil - 2 tbsp
  • Mozzarella cheese - 100g, shredded
  • Gochujang - 1 tbsp
  • Soy sauce - 1 tsp
  • Sesame oil - 1 tsp
  • Black sesame seeds - 1 tsp (for garnish)

Steps

  1. In a mixing bowl, combine the all-purpose flour, water, egg, and salt to create a smooth batter.
  2. Fold in the grated zucchini, grated carrot, diced red bell pepper, chopped green onions, and sliced mushrooms until evenly mixed.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  4. Pour half of the batter into the skillet, spreading it evenly to form a large pancake.
  5. Cook for about 5-7 minutes until the bottom is golden brown, then flip and cook for another 5 minutes until cooked through.
  6. Remove the pancake from the skillet and place it on a baking sheet.
  7. Repeat the process with the remaining batter to make a second pancake.
  8. Preheat your oven to 200°C (400°F).
  9. Spread gochujang evenly over the top of each pancake, then sprinkle shredded mozzarella cheese over the sauce.
  10. Drizzle with soy sauce and sesame oil, then place in the oven for about 10 minutes until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with black sesame seeds, and slice into wedges to serve.
