- All-purpose flour - 100g
- Water - 150ml
- Egg - 1 large
- Salt - 1/2 tsp
- Zucchini - 50g, grated
- Carrot - 50g, grated
- Red bell pepper - 50g, diced
- Green onions - 2, chopped
- Mushrooms - 50g, sliced
- Vegetable oil - 2 tbsp
- Mozzarella cheese - 100g, shredded
- Gochujang - 1 tbsp
- Soy sauce - 1 tsp
- Sesame oil - 1 tsp
- Black sesame seeds - 1 tsp (for garnish)
Steps
- In a mixing bowl, combine the all-purpose flour, water, egg, and salt to create a smooth batter.
- Fold in the grated zucchini, grated carrot, diced red bell pepper, chopped green onions, and sliced mushrooms until evenly mixed.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it evenly to form a large pancake.
- Cook for about 5-7 minutes until the bottom is golden brown, then flip and cook for another 5 minutes until cooked through.
- Remove the pancake from the skillet and place it on a baking sheet.
- Repeat the process with the remaining batter to make a second pancake.
- Preheat your oven to 200°C (400°F).
- Spread gochujang evenly over the top of each pancake, then sprinkle shredded mozzarella cheese over the sauce.
- Drizzle with soy sauce and sesame oil, then place in the oven for about 10 minutes until the cheese is melted and bubbly.
- Remove from the oven, garnish with black sesame seeds, and slice into wedges to serve.
