Ingredients

  • Sweet potato starch noodles - 100g
  • Spinach - 100g
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced (any color)
  • Shiitake mushrooms - 100g, sliced
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Green onion - 1, chopped
  • Black pepper - to taste

Steps

  1. 1. Cook the sweet potato starch noodles according to the package instructions, usually boiling for about 6-8 minutes. Drain and rinse under cold water to prevent sticking.
  2. 2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. 3. Add the sliced onions and cook for 2-3 minutes until translucent.
  4. 4. Add the julienned carrots and sliced shiitake mushrooms, and stir-fry for another 3-4 minutes until they start to soften.
  5. 5. Add the bell pepper and spinach, and continue to stir-fry for 2-3 minutes until the spinach wilts.
  6. 6. Add the cooked noodles to the skillet, followed by the soy sauce, sesame oil, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
  7. 7. Remove from heat and sprinkle with toasted sesame seeds and chopped green onion before serving.
