- Sweet potato starch noodles - 100g
- Spinach - 100g
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, thinly sliced (any color)
- Shiitake mushrooms - 100g, sliced
- Onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Green onion - 1, chopped
- Black pepper - to taste
Steps
- 1. Cook the sweet potato starch noodles according to the package instructions, usually boiling for about 6-8 minutes. Drain and rinse under cold water to prevent sticking.
- 2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- 3. Add the sliced onions and cook for 2-3 minutes until translucent.
- 4. Add the julienned carrots and sliced shiitake mushrooms, and stir-fry for another 3-4 minutes until they start to soften.
- 5. Add the bell pepper and spinach, and continue to stir-fry for 2-3 minutes until the spinach wilts.
- 6. Add the cooked noodles to the skillet, followed by the soy sauce, sesame oil, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
- 7. Remove from heat and sprinkle with toasted sesame seeds and chopped green onion before serving.
