- Tteokbokki rice cakes - 150 grams
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Maple syrup - 1 tablespoon
- Vegetable broth - 100 ml
- Vegan mozzarella cheese - 100 grams
- Green onions - 2 stalks, chopped
- Carrot - 50 grams, julienned
- Red bell pepper - 50 grams, sliced
- Cilantro - a handful, chopped
- Sesame seeds - 1 tablespoon
Steps
- Preheat the oven to 220°C (428°F).
- In a saucepan, combine gochujang, soy sauce, maple syrup, and vegetable broth. Bring to a simmer over medium heat.
- Add the tteokbokki rice cakes to the sauce and cook for about 5-7 minutes until they are heated through and slightly softened.
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a baking tray lined with parchment paper.
- Spread the gochujang sauce evenly over the pizza base, leaving a small border around the edges.
- Evenly distribute the cooked tteokbokki rice cakes on top of the sauce.
- Sprinkle vegan mozzarella cheese over the tteokbokki and add the sliced bell pepper and julienned carrot on top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted.
- Remove from the oven and garnish with chopped green onions, cilantro, and sesame seeds before slicing.
