Ingredients

  • Pizza dough - 250 grams
  • Tteokbokki rice cakes - 150 grams
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Vegetable broth - 100 ml
  • Vegan mozzarella cheese - 100 grams
  • Green onions - 2 stalks, chopped
  • Carrot - 50 grams, julienned
  • Red bell pepper - 50 grams, sliced
  • Cilantro - a handful, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a saucepan, combine gochujang, soy sauce, maple syrup, and vegetable broth. Bring to a simmer over medium heat.
  3. Add the tteokbokki rice cakes to the sauce and cook for about 5-7 minutes until they are heated through and slightly softened.
  4. Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a baking tray lined with parchment paper.
  5. Spread the gochujang sauce evenly over the pizza base, leaving a small border around the edges.
  6. Evenly distribute the cooked tteokbokki rice cakes on top of the sauce.
  7. Sprinkle vegan mozzarella cheese over the tteokbokki and add the sliced bell pepper and julienned carrot on top.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted.
  9. Remove from the oven and garnish with chopped green onions, cilantro, and sesame seeds before slicing.
